Thai people group have a forest-dependent lifestyle, their ingredients in their cuisine are often gathered from the forest and have a strong flavor and taste of the forests. In recent years, these kinds of edible forest trees and unique cultural features have been heavily exploited for ecotourism activities in mountainous areas. In Kem Waterfall area, the study has recorded 118 species belonging to 82 genera and 38 families of 2 vascular plant branches, that collected by local people from the forest for eating and catering for tourists. In terms of usage, diversity of usage, stem type, habitat... have been evaluated to propose solutions to sustainably exploit and develop of edible forest tree species to meet local people and tourism’s needs. The study also listed 23 species that are commonly exploited, 5 species listed in the Vietnam Red Data Book, proposed 6 valuable species for planting and some sustainable harvesting methods to meet local needs and eco-tourism.
